Here is the coconut pineapple mold I made last week. It turned out amazing! To make it mix 1 box lemon Jell-O with 1/2 cup boiling water. Mix until dissolved. Add 1 5.6oz can of coconut milk. And chill until partially set. Whip with electric mixer until stiff and foamy. Fold in pineapple tid-bits and chill until set. (This would also be good with rum, but I didn't have any.)
